    • Prep the steak: Bring to room temperature, pat dry, and season generously with salt, pepper, and optional herbs.
    • Sear: Heat a skillet or grill pan until very hot. Sear the steak for 2–3 minutes on each side to form a golden crust.
    • Cook through: Transfer to a preheated oven (200°C/400°F) or indirect grill heat. Cook to desired doneness (e.g., medium-rare: 54–57°C / 130–135°F).
    • Rest: Let the steak rest for 10 minutes, loosely covered with foil, to redistribute juices.
    • Serve: Slice against the grain and enjoy with your favorite sides or sauces.
